Volcano Teide barraquito wins silver at GastroCanarias 2026
The team at Cafetería de Volcano Teide has once again made its mark at GastroCanarias 2026, securing second place in the Best Barraquito of the Canary Islands competition. Luis Martinez achieved the runner-up spot with a recipe crafted at more than 2,300 metres above sea level, inspired by the sea of clouds and the volcanic landscapes of both Mount Teide and the island of La Palma.
Using coffee from Don Manuel, roasted on La Palma, the drink ranked among the finest creations in the Canary Islands, finishing just a few points behind the winning entry. The recipe was designed to achieve maximum balance between coffee, liqueur, milk and aromas, drawing additional inspiration from the natural surroundings of Mount Teide.
Close contest at the islands’ top food event
The competition brought together around ten participants, each given 15 minutes to prepare and present their proposal live before the judging panel, in one of the most closely watched contests at GastroCanarias. Volcano Teide’s entry was conceived as a tribute, from the heart of Mount Teide, to the first barraquito ever served at the historic Cafetería Imperial in Santa Cruz de Tenerife.
During his presentation, Luis Martinez noted that the essential ingredients of a barraquito have remained virtually unchanged since those early days: coffee, condensed milk, Licor 43, frothed milk, cinnamon and lemon. “What has really evolved,” he highlighted, “is the technique, the balance, the quality of the product and the presentation.”
Harmony of flavours inspired by the landscape
Luis Martinez explained that the aim during his presentation was to ensure no single flavour overpowered another, seeking a harmonious combination where each ingredient had its place and could be appreciated with equal intensity — from the specialty organic coffee to the Licor 43, the milk, cinnamon and lemon zest shavings.
The Volcano Teide barraquito was created in the café located next to the base station of the Teide Cable Car, at 2,356 metres above sea level. It also incorporates a highly polished presentation, where the milk foam evokes the characteristic sea of clouds of Mount Teide, while horizontally placed cinnamon and grated lemon zest add aroma, freshness and a visual nod to the volcanic surroundings that frame the Cafetería de Volcano Teide.
